I remember, today more than ever, that I was 7 years old when I was allowed to help with the cooking.
The table creaked a little from the pressure when I kneaded dough. We would stretch dough with a stick that had all the marks and scratches of loving use. Onions would sauté on a small frying pan on a tiny kerosene stove.
Everything around us was very simple, a humble space in which we didn't think about time but got lost in long meandering talks. That's how we spent the day preparing empanadas, only to be devoured in seconds.
These were my summer days in Cordoba, Argentina, together with my mother, grandmother and my great grandmother, all named… MARIA.
I had to leave a lot of that behind, but I brought something with me: the desire for you to try the flavors that formed me growing up.
And so, Maria Empanada was born of many dreams that have come true:
• A long and hard road that began with only $300,
• The proof that with little, much can be done,
• An aroma that I managed to rescue and now promote in homage to my roots,
• And the reality that you can taste all these sensations at Maria Empanada.
